Once Brewed at The Sill

We love good food and drink and we love local produce. Once Brewed provides an excellent menu using ingredients and products inspired by the National Park. Renowned for its commitment to sourcing quality local ingredients, Fresh Element (BALTIC Kitchen and Six Restaurant) operate the Once Brewed Café with a focus on simple, seasonal and sustainable dishes.

By day, Once Brewed is a light and airy visitor cafe, where hikers, locals, and tourists enjoy a coffee or a light lunch overlooking the rolling Northumberland hills. In the evening, the space is transformed into an intimate bistro, serving hearty British dishes, great wines and local ales in a relaxed and friendly atmosphere.

During the summer months, Once Brewed will be open until 10pm on both Friday & Saturday.

More on Fresh Element

Fresh Element started life in 2004 as a start-up catering company with one small kitchen, one van and a vision for providing the people of the North East with fresh, natural, local food.

This started out as a ‘gourmet ready meal’ delivery service to the busy professionals of Newcastle quayside and quickly expanded into corporate catering, dinner parties and wedding catering.

In 2008 they became the food and drink partner to international art gallery BALTIC. Housed in a former flour mill on the banks of the River Tyne in Gateshead, BALTIC shows an ever-changing calendar of exhibitions by some of the world’s leading artists. The partnership enabled them to open Six, our first restaurant as well as applying the Fresh Element ethos to BALTIC Kitchen and events in the building’s fantastic private hire spaces.

“Northumbrian produce will be prevalent throughout the café and catering menus and all our staff are knowledgeable about the provenance of dishes to help promote the benefits of supporting the local food economy to customers. All our dishes will be freshly prepared on site or supplied through our own butchery and bakery. This enables us to procure ingredients of unparalleled quality and sustainable credentials from within the North East.”
